Ingredients

Lettuce Wraps
¾   cup soya sauce
¾   cup brown sugar
5   cloves of garlic, crushed
1 inch   piece of fresh ginger, grated
1   tbsp sesame oil
¾   cup apple or pear juice
1   lb lean ground beef
2   green onions, finely chopped
¼   cup julienned fresh carrots for garnish
1   tbsp toasted sesame seed
½   head CO-OP Butter Lettuce
Sweet Asian Slaw*
3   tbsp rice vinegar
2   tbsp sesame oil
1   tbsp CO-OP GOLD Soya Sauce
¼   cup honey
¼   cup CO-OP GOLD Sweet Chili Sauce
1   tsp Sambal Oelek (optional, for heat)
2   cups coleslaw mix

Chef’s tips: Slice all toppings and aromatics ahead of time for a streamlined cooking process!

1. Prep ahead
Make bulgogi sauce by combining soya sauce, brown sugar, garlic, ginger, sesame oil and juice.

2. Cook the beef
Preheat a flat-top griddle to high. Because lean ground beef has very little fat, add a small amount of oil; sesame oil is ideal for extra flavour. Cook the beef until crispy and fully broken up. Pour half the bulgogi sauce over meat, stir to coat and cook until starting to caramelize.

3. Assemble wraps and serve
Spoon the cooked beef into fresh butter lettuce leaves. Add your prepared garnishes and drizzle with the reserved bulgogi sauce.

How to make the Sweet Asian Slaw
Combine first six slaw ingredients in a bowl to make dressing. Toss with coleslaw mix and let marinate while the beef cooks.
