Ingredients

Bread
1   CO-OP GOLD PURE Artisan Baguette
3   tbsp CO-OP GOLD Olive Oil
½   cup CO-OP GOLD PURE Traditional Hummus
Bruschetta
  cups diced ripe tomato
½   cup finely diced red onion
½   cup chopped CO-OP GOLD PURE Green Olives Stuffed with Red Peppers
¼   cup chopped fresh basil
1   tsp finely minced garlic
2   tbsp CO-OP GOLD Balsamic Vinegar
1   tsp salt
1   tbsp olive oil

Directions

Prep time: 15 minutes
Total time: 30 minutes
Serves: 8

  • Preheat oven to 375°F.
  • Cut baguette in half lengthwise. Drizzle olive oil on all sides of the baguette, rubbing it in to make sure it’s coated. Place on a baking tray and bake for 8 minutes until lightly browned but not dried out.
  • When baguette has cooled, spread hummus on the top half of the baguette.
  • Place all bruschetta ingredients in a medium bowl and stir with a spoon, mixing well. Evenly top baguette with bruschetta. On a cutting board, cut in pieces and place on a serving platter.

Note: To dice the tomato, cut the tomato in half through the core. Then, cut each half into quarters. Carefully remove the seeds, leaving the flesh of the tomato. Cut into small pieces.
