Bread & Butter Pudding Bacon French Toast
Ingredients

cups bread, cut into 1-inch cubes |

cup – 1 cup CO-OP GOLD Maple Syrup |
Directions

Cook Time: 30 minutes
Preheat oven to 375°F.
Place eggs, cream, melted butter, sugar, cinnamon and vanilla into a large bowl and whisk well. Lightly chop six strips of bacon, and add to egg mixture. Add in raisins and bread cubes. Mix well and let sit for 10 minutes, stirring occasionally.
Spray six mini loaf pans with cooking spray, or grease with butter. Spoon bread-cube mixture into the pans, making sure to distribute the raisins and bacon evenly. Spread top until smooth. Bake for 15 to 18 minutes or until cooked through. Chop remaining six pieces of bacon. Let cool slightly. Serve warm, garnishing with remaining bacon and maple syrup.
Tip: it’s always best to use bread that’s a bit dry, as it absorbs the mixture better.
