Beer-Braised Smokies

Ingredients

| 1 | large onion, sliced | |
| 1 | large bell pepper, sliced | |
| 16 | oz non-alcoholic beer | |
| 4 | fresh hot dog buns | |
| CO-OP GOLD Dill Pickle Yellow Mustard | ||
| Sauerkraut |

Chef’s tip: Serve with BBQ foil-roasted potatoes.
1. Prepare the beer braise
Preheat your grill to high heat. Place a Co-op Gold Dutch Oven on the grill and heat until hot. Add onions, peppers and beer to start the caramelization process.
2. Grill the smokies
Grill the smokies until charred on both sides, about 6 minutes total. Add the charred smokies to the Dutch oven, cover with a lid and turn grill down to medium.
3. Cook until caramelized
Let simmer undisturbed for about 15 minutes until the onions and peppers have caramelized and the beer has reduced.
4. Assemble and serve
Place each smokie in a fresh bun. Top with the beer-braised onions and peppers, a drizzle of dill pickle mustard and sauerkraut.
