Beef Roast with Zesty Tomato Relish

Ingredients

| 1 | red onion | |
| 3 | cloves garlic, finely sliced | |
| 6 | vine-ripened tomatoes, medium dice | |
| ½ | teaspoon cayenne pepper, ground | |
| ½ | tablespoon smoked paprika | |
| 3 | tablespoons lime juice | |
| 3 | tablespoons lemon juice | |
| ⅓ | cup sugar | |
| ½ | tablespoon salt | |
| 1 | jar CO-OP GOLD PURE Steak it Easy Seasoning | |
| 1 | standard CO-OP outside hip roast |
Directions
Relish
Heat medium-sized saucepan over medium heat; add splash of olive oil. Add onion and garlic and sweat until translucent. Add next seven ingredients and continue cooking for approximately 20 minutes or until a loose but textured relish is achieved.
Roast
Preheat the grill to approximately 300° F.
Evenly rub the hip roast with the steak spice; let sit for 20 minutes. Turn off half the grill and then transfer the roast to the unlit side of the grill. Continue cooking at an even temperature until the desired degree of doneness is achieved, about 1.5 – 2 hours. Probe with a meat thermometer for most accurate results. See chart below. Let rest for at least 20 minutes before slicing. Serves eight.
