Barbecue Sauce

Ingredients
3   cloves of garlic, finely chopped
½   red onion, small diced
  cup brown sugar
¼   cup fancy molasses
2   tablespoons honey
½   cup malt vinegar
1 ½   cups CO-OP GOLD Ketchup
1   teaspoon ground cumin
1 ¼   teaspoons smoked paprika
1   teaspoon ground cinnamon
    CO-OP GOLD Extra Virgin Olive Oil
Directions

In a medium-sized pot over medium heat, warm a good splash of olive oil. Lightly sauté the garlic and onions until translucent. When tender, add the brown sugar, molasses and honey. Bring to a boil to fully dissolve the brown sugar and allow them to lightly caramelize, then add the vinegar and cook for five minutes. Add ketchup and the spices. Lower the heat to medium low and continue simmering for 20 to 30 mins. Remove from heat and allow to cool.
