Ingredients

1   400g package CO-OP GOLD Cod Fillets
¼   teaspoon salt
  cup fresh green beans
3   tablespoon olive oil
1   teaspoon fresh garlic, finely minced
¼   teaspoon chili flakes
1   tablespoon lemon juice
¼   teaspoon lemon zest
1   tablespoon fresh basil, chopped

  • Preheat oven to 350°F. Season cod fillets with salt and place on a baking tray lined with parchment paper. Bake for 6–8 minutes or until just cooked through.
  • Bring a pot of salted water to a boil. Add green beans and cook for about 3 minutes or until they are just tender. Strain them well and add to your two plates. Place fish on top of beans.
  • Add oil to a small frying pan on medium heat and allow to warm up. Add garlic and chili flakes and cook for 1 minute, not allowing the garlic to brown. Next, add lemon juice, zest and basil and cook for another 30 seconds. Spoon sauce over fish and green beans and serve.
