Ingredients

  cups flour
2   tsp baking powder
¼   cup sugar
  cup butter
  cup CO-OP GOLD Dried Cranberries
½   cup diced Granny Smith apple
1   cup CO-OP GOLD Unsweetened Applesauce
1   egg
1   tsp vanilla extract
3   tbsp CO-OP GOLD Honey

  • Preheat oven to 400°F.
  • Place flour, baking powder and sugar in a large bowl. Take butter out of the fridge and grate on a box grater. Add the grated butter to the bowl and lightly mix through flour mix so it lightly crumbs.
  • In a separate bowl, mix cranberries, apple, applesauce, egg and vanilla. Add to the flour mixture. Mix it just enough to bring it together. You want to mix it but work it as little as possible to help it to become a flaky scone.
  • Lightly flour your counter, place dough on it and flatten to 1-inch thick. Cut into 10 pieces and place on a parchment-lined baking tray. Place tray in the freezer for 20 minutes to allow dough to become very cold.
  • Bake for 12-14 minutes, or until light golden brown and moist in the middle.
  • Take out of oven and allow to fully cool down. Once cool, drizzle honey over top of each scone and let it set.
