With steady, even heat, cast iron pans make cooking a steak a breeze.
First, make sure you let your steak come to room temperature - it'll help it to cook evenly.
Next, generously season both sides of the steak. Pre-heat your skillet over high heat and add canola oil. When the oil is shimmering, cook the steak for three to four minutes on each side or until it's browned.
This temperature guide will help you cook your steak to the level you want:
- Medium-rare: 63 degrees C (145 degrees F)
- Medium: 71 degrees C (160 degrees F)
- Well Done: 77 degrees C (170 degrees F)
When your steak is cooked, it's time to add more flavour. Reduce the heat to medium-low and add compound butter, herbs or seasonings and baste the steak for one or two minutes.
Now, remove your steak from the pan and let it rest for five minutes before serving.
