Since we’re talking history, we thought we’d serve up a little nostalgia. We dug into the archives and found some throwback coffee recipes that deserve a comeback. These treats are just as delicious today as they were back in the day.
Coffee torta
Coffee and cake are a perfect pairing, and even better when layered together. Bake a sponge cake in a jelly roll pan, then chill and cut into three equal pieces. Cook one pound of dates in enough strongly brewed Co-operative Coffee to cover them. Spread the dates between the cake layers and frost the top with creamy icing flavoured with lemon juice and rind for a refreshing, zesty finish.
Frosted coffee cream
If you prefer your caffeine fix fancier than just a cup of joe, try frosted coffee cream. Combine two-thirds of a cup of condensed milk with a half cup of strongly brewed Co-operative Coffee and vanilla to taste. Chill, then fold in one cup of stiffly beaten cream. Freeze for 30 minutes, beat, freeze for another 30 minutes, beat again and freeze until firm. Scoop over milk and ice in a glass, stir and enjoy.
Rio rice coffee pudding
Rice pudding is a classic comfort food that you can easily perk up. Cook rice according to the package directions, replacing the water with strongly brewed Co-operative Coffee. For every two cups of cooked rice, stir in one cup of milk, half a cup of sugar, two cups of small marshmallows and one cup of strong coffee. Cook until creamy, chill, then stir in one cup of whipped cream and sliced cherries or raisins before serving.
Coffee peach pie
Sweet peaches are balanced with bold coffee in this cozy dessert. Place sliced peaches into a baked pie shell. Prepare vanilla pudding mix using half brewed Co-operative Coffee and half milk, stir in some slivered dates, then pour over the peaches. Sprinkle with pecan halves and top with a spiral of peach slices for a beautiful and irresistible sweet treat.
