Savoury Apple Mini Tarts

Ingredients

cups Granny Smith apples, peeled and cut into ¼-inch pieces | |

cups CO-OP MARKET TOWN Mild White Cheddar, grated and divided | |

teaspoon lemon zest | |
2 | tablespoons red onion, finely diced | |
2 | teaspoons fresh dill, lightly chopped | |

teaspoon ground black pepper | |

cup CO-OP GOLD Sour Cream | |
12 | CO-OP GOLD Mini Tart Shells |
Directions
Makes 12
Prep Time: 10 minutes
Cook Time: 10 minutes
Preheat oven to 400°F.
Toss diced apples with brown sugar and let stand for five minutes. Add remaining filling ingredients, reserving ½ cup of the cheese. Mix well with a spoon. Fill mini tart shells with the filling, topping with reserved cheese.
Bake for five minutes. Rotate for even baking, and continue to cook for five to seven minutes until golden. Let cool and serve.
